The Chianina Porterhouse is an impressive T-bone steak from the famous Italian Chianina breed. On either side of the characteristic T-shaped bone, you get two exceptional cuts of beef in one steak: a generous striploin section and a beautifully tender piece of fillet. Thick-cut and ideal for grilling on the barbecue or preparing as an authentic Bistecca alla Fiorentina. Chianina beef is renowned for its fine texture, relatively lean character and pure, distinctive beef flavour.

**What is Chianina beef?**

Chianina is an ancient Italian cattle breed originating from the Val di Chiana, between Tuscany and Umbria.

The breed is instantly recognisable by its characteristic white coat and impressive size. Chianina is one of the largest cattle breeds in the world and was historically used both as a working animal and for its meat.

Today, Chianina is best known for its high-quality beef and its inseparable connection with one of Italy’s most iconic steaks: the **Bistecca alla Fiorentina**.

**What is a Chianina Porterhouse?**

A Porterhouse is cut from the back of the animal and is easily recognised by its characteristic T-shaped bone.

On one side of the bone is the **striploin**, full of beef flavour with a firm yet tender texture. On the other side is the **fillet**, the exceptionally tender and delicate part of the steak.

That is what makes a Porterhouse so special: two different textures and flavour experiences in one impressive steak.

The Chianina Porterhouse is also a generous cut of beef, making it ideal for sharing between two or more people.

**Chianina is not heavily marbled beef**

If you are buying Chianina for the first time, it is important to understand that this is a very different style of beef from Wagyu or heavily marbled grain-fed beef.

Chianina is naturally relatively lean with a fine meat structure. Its appeal is therefore not based on an abundance of intramuscular fat, but on its **pure beef flavour, fine fibres and characteristic bite**.

That is exactly why this meat is at its best when prepared simply, without heavy marinades or overpowering sauces.

**Bistecca alla Fiorentina – the iconic preparation**

Want to prepare your Chianina Porterhouse the Tuscan way? Turn it into an authentic **Bistecca alla Fiorentina**.

This famous Italian steak preparation is all about simplicity and the quality of the beef.

Allow the steak to come up to temperature before cooking, then sear it over a very hot barbecue or grill. Grill both sides briefly, keeping the inside beautifully red and juicy.

Traditionally, Bistecca alla Fiorentina is served **rare rather than medium**.

Allow the steak to rest briefly after grilling. Then cut the meat away from the bone and slice both the striploin and fillet into generous slices.

**Keep the finishing touches simple**

Beef with this much character does not need complicated seasoning.

A little coarse sea salt, freshly ground black pepper and a good-quality olive oil are really all you need.

For an even more Tuscan touch, serve it with a few lemon wedges and a simple green salad.

No heavy sauces and no complicated marinades: with a good Chianina Porterhouse, the beef itself should always be the star.

**Chianina Porterhouse on the BBQ**

Its thickness and generous size make this steak particularly well suited to the barbecue.

Start by searing it over intense direct heat to create a beautiful crust. With a very thick Porterhouse, you can then continue cooking it over indirect heat.

Keep in mind that the fillet cooks faster than the larger striploin section. If possible, position the fillet slightly further away from the strongest heat source.

Always allow the meat to rest before slicing.

**Who is Chianina Porterhouse for?**

This steak is an excellent choice for anyone who appreciates authentic Italian beef and a pure, distinctive beef flavour.

It also makes an impressive centrepiece for a barbecue or dinner where one large steak is shared at the table.

If you are primarily looking for extremely buttery, intensely marbled beef, Wagyu will probably suit your taste better. But if you are looking for a **classic, generously sized steak with pure beef flavour and an exceptional story**, Chianina is definitely worth discovering.
