# Venison loin, roe deer loin or wild boar loin: what is the difference?

**Venison loin, roe deer loin and wild boar loin differ in flavour, tenderness, texture and size. Venison loin has a rich, elegant game flavour; roe deer loin is exceptionally fine-textured and delicate; wild boar loin has a bolder character, can be slightly firmer and is often marinated. At Gustor, these cuts always refer to the back loin: the boneless meat from the chops, not the much smaller tenderloin. We always sell roe deer and wild boar loins whole, whereas venison loin is cut into portions from a larger loin.**

choosing a beautiful cut of game during the hunting season, you may be torn between deer, roe deer and wild boar. Their loins may look similar at first glance, but the differences are significant. Here we explain exactly which cut you are buying, what it tastes like and how best to cook it.

## 1. What is a game loin? The back loin is not the tenderloin

The word “fillet” can cause confusion. Many people immediately think of the tenderloin or fillet steak. At Gustor, however, our venison, roe deer and wild boar fillets are a different cut.

**Our game fillets are back loins, not tenderloins.**

### The back loin: essentially boneless chops

**The back loin runs along the outside of the backbone. It is the long muscle that makes up the main meaty part of the chops. Put simply, the back loin is the meat from the chops with the bones removed. In beef, it is comparable to striploin or sirloin steak.**

Because this muscle does relatively little work, it is generally fine-textured and tender. The back loin can be cooked whole or sliced into steaks.

### The tenderloin: a much smaller cut

The true tenderloin, also called fillet or filet mignon, lies on the inside of the backbone. It is a different muscle, renowned for its exceptional tenderness.

**In game animals, these tenderloins are particularly small, especially in roe deer. They are two narrow muscles that yield only a limited amount of meat. Back loins are considerably larger and therefore much better suited to being sold as whole loins or steak portions.**

**Remember: at Gustor, venison, roe deer and wild boar fillets refer to the back loin, not the tenderloin.**

## 2. [Venison loin](https://gustor.eu/en/meat/french-wild-deer-fillet): tender, elegant and full of flavour

Venison loin is a classic game cut. The meat is deep red, fine-textured and has a rich yet elegant game flavour. Deer are relatively large animals, so their back loins are considerably bigger than those of roe deer.

### What does venison loin taste like?

Venison loin is generally very tender and lean. Its game flavour is distinctive without necessarily being strong or overpowering. Compared with roe deer loin, its flavour is usually slightly fuller.

### How is venison loin sold at Gustor?

**We sell venison loin in portions cut from a larger back loin. If you order 300 g, for example, you receive a beautiful piece weighing approximately that amount, but not necessarily the animal's entire loin. This makes it easy to choose the quantity you need.**

### How do you cook venison loin?

Pat the meat dry, sear it briefly on all sides in a hot pan, then finish cooking gently. Venison loin is often served pink; a core temperature of around 52–55°C is a common culinary guide, not a guaranteed food-safe final temperature. Let the meat rest before carving.

**Our butcher's tip: venison loin is lean, so overcooking can dry it out. Serve with game jus, red wine sauce, wild mushrooms, celeriac purée or cranberries.**

## 3. [Roe deer loin](https://gustor.eu/en/meat/fillet-of-roe-deer): exceptionally fine, delicate and tender

Roe deer loin comes from a roe deer (a male is known as a roebuck). Roe deer are much smaller than red deer, so their back loins are also considerably smaller. Roe deer loin is prized for its delicate flavour and exceptionally fine texture.

### What does roe deer loin taste like?

Roe deer loin has a subtle, elegant game flavour. It is very lean and exceptionally tender when carefully cooked. Compared with venison loin from larger deer, it is generally slightly more delicate in flavour.

### Why are roe deer loins so small?

This is simply down to the animal's anatomy. Roe deer are smaller than red deer, so their back muscles are shorter and lighter too. A smaller loin is certainly not an inferior cut.

### How is roe deer loin sold at Gustor?

**We always sell roe deer loin as one whole back loin. If you select a 200 g roe deer loin, for example, you receive one complete loin weighing approximately 200 g, not a piece cut from a larger loin.**

Weights vary according to the size of the animal. Keeping the loin intact allows you to cook and present it whole.

### How do you cook roe deer loin?

Because of its small size, roe deer loin cooks quickly. Sear it briefly on all sides, perhaps with butter, thyme and garlic. It is also often served pink, at around 52–55°C internally; this is not a guaranteed food-safe final temperature. Let it rest, then slice into medallions.

**Our butcher's tip: keep the sauce subtle. A light game jus, mushrooms or parsnips beautifully complement its delicate flavour.**

## 4. [Wild boar loin](https://gustor.eu/en/meat/young-wild-boar-fillet-french-game): bold, distinctive and often marinated

**Wild boar belong to the pig family, while deer and roe deer belong to the deer family. This is reflected in both flavour and texture. Wild boar loin is one of the animal's finer cuts, but it is not always as tender as venison or roe deer loin.**

### What does wild boar loin taste like?

Wild boar loin has a rich, savoury flavour with a distinctive game character. The taste varies with the animal's age, diet and origin. The texture is often slightly firmer than venison or roe deer loin.

### Why is wild boar loin often marinated?

Traditionally, wild boar loin is often marinated in red wine with juniper berries, bay leaves, thyme, onion and garlic. This adds aroma and balances its bold game flavour.

**A marinade may have a modest effect on the surface of the meat, but it will not automatically turn a firm loin into a meltingly tender cut. Its main purpose is to add flavour.**

### How is wild boar loin sold at Gustor?

**We always sell wild boar loin as one whole back loin. Each advertised weight represents a separate, complete loin, not a portion cut from a larger one.**

### How do you cook wild boar loin?

You can marinate the loin beforehand. Remove it from the marinade, pat it thoroughly dry and sear it nicely on all sides. Then finish cooking gently.

**Food safety is especially important with wild boar, partly because of the potential risk of Trichinella parasites. We therefore recommend an internal temperature of at least 71°C, checked with a reliable meat thermometer. Marinating does not make the meat safe without sufficient cooking.**

**Our butcher's tip: pair wild boar loin with a fragrant marinade, wild mushrooms, juniper berries or a rich red wine sauce.**

## 5. Comparing venison, roe deer and wild boar loin

| Feature | Venison loin | Roe deer loin | Wild boar loin |
| --- | --- | --- | --- |
| Animal | Deer | Male roe deer | Wild boar |
| Cut | Back loin | Back loin | Back loin |
| Flavour | Rich and elegant | Subtle and refined | Bold and distinctive |
| Tenderness | Very tender | Exceptionally tender | Variable, sometimes firmer |
| Marinating | Not necessary | Not necessary | Often used |
| How Gustor sells it | Portions from a larger loin | Always a whole loin | Always a whole loin |

## 6. Why do game loin weights vary?

Loin size depends on the size and development of the animal. The way the meat is butchered also makes a difference.

### Venison loin: cut into portions

Deer back loins are relatively large, so at Gustor we cut them into different weights. A 300 g venison loin is therefore a portion of a larger back loin.

### Roe deer loin: always whole

A 200 g roe deer loin, for example, is one complete back loin from the animal, not a cut portion.

### Wild boar loin: also always whole

For wild boar too, every advertised weight represents one complete back loin. Weights vary from animal to animal.

## 7. Which game loin should you choose?

### Choose [venison loin](https://gustor.eu/en/meat/french-wild-deer-fillet) for a classic, elegant game flavour

Venison loin is ideal if you enjoy very tender meat, a rich yet refined flavour and attractive, even portions for a festive main course.

### Choose [roe deer loin](https://gustor.eu/en/meat/fillet-of-roe-deer) for extra finesse

Roe deer loin is an excellent choice if you are looking for an exceptionally fine texture, subtle flavour and a smaller whole loin.

### Choose [wild boar](https://gustor.eu/en/meat/young-wild-boar-fillet-french-game) loin for bold character

Wild boar loin is perfect for lovers of pronounced game flavours, a slightly firmer bite and traditional dishes with herbs, marinades and rich sauces.

## 8. How much game loin should you allow per person?

**As a general guideline for a main course, allow approximately 180–220 g of venison loin, 150–200 g of roe deer loin or 180–220 g of wild boar loin per person. Smaller portions may be enough for a multi-course meal.**

Remember that Gustor sells roe deer and wild boar loins only as whole pieces. You can, of course, divide a whole loin into several portions after cooking.

## 9. Frequently asked questions about game loins

### Is venison loin the same as deer tenderloin?

No. At Gustor, venison loin means the back loin: the boneless meat from the chops. The tenderloin is a smaller muscle on the inside of the backbone.

### What is the difference between back loin and tenderloin?

The back loin runs along the outside of the backbone and is comparable to a boneless chop. The tenderloin lies on the inside and is generally much smaller in game animals.

### Why are game tenderloins so small?

They are naturally small muscles. In smaller game species, such as roe deer, they yield only a limited amount of meat.

### What is the difference between venison loin and roe deer loin?

Venison loin from larger deer generally has a slightly fuller flavour. Roe deer loin is smaller, more subtle and exceptionally fine-textured.

### Is roe deer loin more tender than venison loin?

Both are generally very tender. Roe deer loin is prized for its extra-fine texture, but tenderness also depends on the animal and how it is cooked.

### Is wild boar loin as tender as venison loin?

Not always. Wild boar loin can be tender, but its texture is often slightly firmer.

### Do you need to marinate wild boar loin?

No, but marinating is traditionally common to enrich the flavour. Red wine, bay leaves, thyme and juniper berries make an excellent marinade.

### Does marinating make wild boar loin more tender?

A marinade may have a limited effect on the surface texture, but it will not automatically make a firm loin meltingly tender.

### Is Gustor's venison loin sold whole?

Not necessarily. We cut venison loin into portions from a larger back loin.

### Are Gustor's roe deer and wild boar loins whole?

Yes. With both types, you always receive one complete back loin in the advertised weight.

### Can all game loins be served pink?

Venison and roe deer loins are often served pink for culinary reasons, but this is not a guarantee of food safety. For wild boar, we recommend an internal temperature of at least 71°C because of specific food safety risks.
