# CLEAN LABEL

## 1.WHAT DOES CLEAN LABEL MEAN?

A product with a Clean Label is a product in its purest form. Without additional additives of

- Preservatives
- Colourings
- Colour stimulants
- Stabilisers
- Emulsifiers
- Phosphates
- Thickeners
- Etc...

 

These products are also not packaged in a closed 'protective atmosphere'. In reality, such a secure atmosphere is synonymous with storage gas or a combination of gases that guarantees a beautiful color of the product from installation storage time.

None of this!

## 2. WHY THIS CLEAN LABEL?

The consumer needs **clarity**.  
Almost daily we are asked by potential customers what additives are in our products.  
This often concerns questions about allergens. To be clear: it is not because a product contains allergens that it is a bad product.  
But we must also ask ourselves whether those allergens are appropriate. It is the most normal thing in the world that milk contains lactose. But it is not normal that there is gluten in the worst. Sausage or minced meat should simply be ground meat, an ingredient with some specific seasoning. But gluten does not belong in it, unless you choose a, in our opinion, inferior product, where men use gluten to be able to add X% water without it being noticeable.  
**Just because a product is allowed does not mean it is appropriate to use it.**

Many of our products have so much **flavor** that customers wonder where that flavor comes from. This is certainly the case for our dry-aged meat.  
Well-being is inherent to the product. We want to make it similarly clear that flavor is inherent to the type of meat we offer and that no hocus pocus is needed for that.  
  
In a meat world that is flooded with additives, marinades, rubs, etc.. we probably almost forget that there are also top products that contain a lot of flavor from nature. That one steak is not the same as another, just like a chop or lamb.

Back to **‘normal’**.

- Meat changes colour depending on the amount of oxygen it is bound to.
- The colour of pork is grey, not pink.
- Ground lean beef does not naturally stick together.
- Water does not stick to meat.
- Meat with flavour also has a specific smell.
- And we can go on like this for a while.

 

A great many of the ‘qualities’ that the average consumer currently expects from meat are the result of unnatural processes, the addition of (admitted) additives and of marketers who make us believe that it is so hears.  
Customers wonder why our products sometimes have a different colour than they are used to.

Here we also come back to the recommended ‘protective atmosphere’. Our products are simply vacuum packed, under similar combinations of gases.

Why don’t we add (approved) colour-preserving agents to our products, or binding agents to our hamburgers? Because these are actually irrelevant, can cause irritation or can mislead consumers.  
Pure nature seems to us a much better option.

We also sometimes see meat at importers that comes in with a best-before date of 6 months. It is understandable that wholesalers and catering companies like to work with these products because it makes stock management a lot easier. There is no preservative to be found on the label. Well, this is NOT normal and so the product can never get a clean label from Gustor.

## 3. WHY 2 TYPES OF CLEAN LABEL AT GUSTOR?

Green Clean Label: only pure meat. Nothing added.  
Blue Clean Label: pure meat with a natural seasoning such as: sea salt, black pepper, aniseed, etc...

We give some products a specific seasoning. This is the case with our salsiccia, for example. To be clear: Blue Clean Label means pure nature again. We do not work with ordinary (chemically produced) kitchen salt, but with natural sea salt. For example, it is important for customers who follow a specific diet or have an allergy to know that they are
