# 🥩How to Cook the Perfect 1 kg Avileña Negra Ibérica Côte à l’Os – BBQ & Grill Masterclass

A Côte à l’Os from Avileña Negra Ibérica deserves a cooking method that highlights the exceptional character of the beef.

## **Ingredients**

- 1 Avileña Negra Ibérica Côte à l’Os of approximately 1 kg
- Coarse sea salt
- Freshly ground black pepper (optional)

## **Step 1 – Preparation**

Remove the meat from the refrigerator at least 2 hours before cooking.

Pat it dry with paper towels.

Allow it to come to room temperature.

## **Step 2 – Prepare the BBQ or Grill**

Preheat your BBQ, kamado, or grill to approximately 110–120°C (230–250°F).

Set up for indirect cooking.
